Ingredients:
- 2 slices of sourdough bread
- 1 ripe avocado
- 2 eggs
- 1 tbsp vinegar (for poaching)
- 1 tbsp honey
- ½ tsp chili flakes
- Salt & black pepper
- 1 tbsp olive oil
- Optional: feta cheese or microgreens
Instructions:
- Toast the sourdough bread until golden and crispy.
- Mash the avocado with salt, pepper, and olive oil. Spread on toast.
- Bring water to a gentle simmer, add vinegar, and poach eggs (about 3 minutes).
